Baking just got a lot easier! This easy cookie recipe is super quick to make, contains no refined sugars and has only two ingredients! Ideal for those of you on the go, you can whip up these healthy snacks in no time at all. Not only are they hassle free, you can make use of overripe bananas to stop them from going to waste, making them the perfect guilt free cookies!

Makes around 9 cookies
- 2 medium ripe bananas
- 150g oats
(yep, that’s really it)
- Preheat the oven to 180
- Line a baking sheet with parchment
- Mash the ripe banana with a fork
- Mix in the oats
- Separate the mixture into about 1 tbsp portions
- Take each portion, roll into a ball and then slightly flatten onto the baking parchment
- Bake for around 15 minutes, or until golden and firm

Add in a sprinkle of ground cinnamon, ground ginger and ground nutmeg as well as some pumpkin seeds into the mixture for the perfect autumnal treat.
Mixing a drizzle of honey will add just enough sweetness or if you’re feeling extra sweet, sprinkle a handful of dark chocolate chips into the mixture.
Top with a swirl of peanut butter before baking or add in some chopped nuts and dried fruit.
