Makes around 9 cookies
INGREDIENTS
- 2 medium ripe bananas
- 150g oats
(yep, that’s really it)
METHOD
- Preheat the oven to 180
- Line a baking sheet with parchment
- Mash the ripe banana with a fork
- Mix in the oats
- Separate the mixture into about 1 tbsp portions
- Take each portion, roll into a ball and then slightly flatten onto the baking parchment
- Bake for around 15 minutes, or until golden and firm

Autumn spice
Add in a sprinkle of ground cinnamon, ground ginger and ground nutmeg as well as some pumpkin seeds into the mixture for the perfect autumnal treat.
Sweet tooth
Mixing a drizzle of honey will add just enough sweetness or if you’re feeling extra sweet, sprinkle a handful of dark chocolate chips into the mixture.
Feeling nutty
Top with a swirl of peanut butter before baking or add in some chopped nuts and dried fruit.
