Cooking doesn’t have to be complicated at all, this delicious yet simple dinner recipe is easy to make and will raise your dinner game. It’s light, packed full of vegetables and thanks to the couscous is a great source of fibre. Serves 2  


For the pesto

  • 1 cup fresh basil
  • 1/4 cup parmesan (for a vegan pesto swap try nutritional yeast)
  • 1 tbsp pine nuts
  • 2 tbsp of olive oil
  • 1 garlic clove 

For the sea bass

  • 2 sea bass fillet
  • 1/2 lemon
  • 2 tbsp of olive oil
  • 1 pinch of salt and freshly ground pepper

For the couscous

  • 1 tsp olive oil
  • 1 red onion
  • 1 aubergine
  • 1 garlic clove
  • 1 courgette
  • 1 red pepper
  • 2 tsp tomato puree
  • 1 can tinned tomatoes
  • 80g dried giant couscous
  • ½ tsp oregano
  • 1 tsp vegetable bouillon or stock
  • A few sprigs of basil

  1. For the pesto: blend all the ingredients in a food processor (or cut finely) until smooth.

  2. For the couscous: Dice the aubergine, pepper, courgette and onions.

  3. Heat the oil in the pan and add the onions, allowing them to sweat for 6-7 minutes, then add the aubergine and cook on a low heat for 5 minutes.

  4. Add the rest of the vegetables, along with the garlic and cook for a further 4 minutes before adding the tomato puree, dried oregano and a pinch of salt and pepper.

  5. Add the tinned tomatoes, bouillon and water, bring to the boil and then simmer for 15 minutes.

  6. Add the couscous and simmer with the lid partially on for a further 15 minutes until most of the liquid has been absorbed.

  7. Whilst the couscous is simmering, season the fish with ground pepper and salt.

  8. For the sea bass: in a separate pan, heat 2 tbsp of oil on a medium heat, lay the fillet skin-down, and fry for 4 minutes until the skin turns crispy. Flip the fillet over and fry for a further 2 minutes. 

  9. Squeeze over the juice of 1/2 lemon, spoon pesto over the sea bass and serve with the couscous.
